In the late 1980s Ivan and I lived in hills of East Orange, where we were delighted to find right on E. Chapman there a Vietnamese restaurant, Mai's Cuisine.

Mai herself cooked and served, she and her mother and even grandmother cooked, and there has never been Viet food to equal what we had there since. She taught us so much! My student assistants at the time, also recent immigrants and good sources of early Bolsa technology tips, were impressed with the range of dishes I would report from our latest Mai's meals.

Here's the location, Orange habitues or commuters will recognize the strip mall with that hot dog place I've never been in the parking lot.

Sure do wish I knew where Mai is now... if her family's recipes are still being prepared somewhere for some lucky patrons, well, they really are lucky.

I realize it's 20+ years hence, but... anyone else remember Mai's? Or better, know where she might be?
